The author remembers mung bean sheets stuffed in street-vendor bread rolls (cai jia mo) from school days and has never gotten them out of their head. The dressing is versatile and works on all kinds of cold dishes — even dumplings.

Boil the mung bean sheets in hot water for about 1 minute. Lift them out and let them sit in cold water. In the same hot water, blanch the celery (or any vegetable you like).

✅ Done when: The sheets are soft and pliable after about 1 minute in boiling water, and the celery is briefly blanched.

  2. Cut the scallions into sections. Pour hot oil over the white sesame seeds, chili powder, Sichuan peppercorns, red chilies, and scallion sections. Stir in light soy sauce, vinegar, sesame oil, chicken bouillon powder, and cilantro.

✅ Done when: The hot oil sizzles over the aromatics, releasing a fragrant, toasty aroma, and the dressing is evenly mixed.

  3. Lift the mung bean sheets out of the cold water and slice them. Pour the dressing over the sliced sheets.

✅ Done when: The sliced sheets are evenly coated with the dressing and ready to serve.
