  2. Heat oil, pour in beaten eggs, scramble and set aside.
  3. Add 1 tbsp doubanjiang (fermented bean paste), fry on low heat until red oil appears. Add carrot and mushroom strips, stir-fry on high heat until soft.
  4. Add the eggs and sauce, stir-fry on high heat until evenly coated.
