Cut wood ear mushrooms and carrot into strips. Beat the eggs. Sauce: 2 tbsp light soy sauce, 1 tbsp vinegar, 1 tbsp sugar, 1 tbsp oyster sauce, 1 tbsp cornstarch, 0.5 tbsp dark soy sauce, minced garlic, and some water.

Heat oil, pour in beaten eggs, scramble and set aside.

Add 1 tbsp doubanjiang (fermented bean paste), fry on low heat until red oil appears. Add carrot and mushroom strips, stir-fry on high heat until soft.

Add the eggs and sauce, stir-fry on high heat until evenly coated.

The eggs absorb the sauce perfectly – super delicious with rice! Make sure to cook extra rice!
