Foolproof Sesame Crisps — One Egg White Is All You Need
Ingredients
- 36.5 Egg white
- 0.5 Salt
- 20 Powdered sugar
- 20 Corn oil
- 18 All-purpose flour
- 2 Cornstarch
- 27 White sesame seeds
Instructions
- Prepare all ingredients in advance. In a bowl, combine the egg white, sifted powdered sugar, and corn oil.
- Stir thoroughly until fully blended.
- Add the sifted all-purpose flour and cornstarch.
- Stir until smooth with no lumps — the batter should be silky, glossy, and pourable.
- Pour in the white sesame seeds.
- Stir until evenly mixed.
- Transfer the batter to a piping bag and snip a small opening at the tip.
- Pipe evenly onto a baking sheet. Gently tap the tray to let the batter spread naturally into thin rounds.
- Bake in a convection oven at 150°C for 15–18 minutes.
- Keep a close eye on the color toward the end. For extra crispiness, bake 2 more minutes — a deeper golden color means more flavor!
- Once baked, unmold while still slightly warm. Let cool completely before eating for maximum crunch.
- Store in an airtight container once completely cool.
