Garlic Pork Bites

Ingredients

  • pork shoulder (plum flower meat)
  • ginger and scallion

Instructions

  1. Prep ingredients: pork shoulder, ginger and scallion, garlic, onion
  2. Marinate step 1: Cut pork shoulder into bite-sized pieces. Add ginger and scallion, 2 tbsp light soy sauce, 1 tbsp baijiu (Chinese white liquor), 1 tbsp sugar, a pinch of pepper, and a pinch of salt-and-pepper seasoning. Marinate for 10 minutes.
  3. Marinate step 2: Remove ginger and scallion. Add a little cornstarch and mix well, then add a splash of oil and marinate for another 10 minutes.
  4. Heat oil in a wok and stir-fry the pork bites until lightly charred on the surface. Remove and set aside.
  5. Heat fresh oil in the wok, add garlic and onion and stir-fry until fragrant.
  6. Return the pork bites to the wok and toss everything together. Season with your favorite spices such as salt-and-pepper seasoning or cumin.
  7. Plate and serve.
