Steam over high heat for 10 minutes, then add sliced ginger and continue steaming over low heat.

After another 10 minutes, add soy sauce. Poke the fish with chopsticks to check doneness — if the flesh separates cleanly from the bone, it’s done. If not, steam a few more minutes until fully cooked.
