Spicy Dry Pot Cauliflower

Ingredients

  • 500g Cauliflower (broken into small florets)
  • 6-8 Dried red chilies
  • 1 tsp Sichuan peppercorns
  • 2 tbsp Minced garlic
  • 1 tbsp Minced ginger
  • 3 Scallions (white parts, cut into sections)
  • 100g Ground pork (optional)
  • 2 tbsp Light soy sauce
  • 1 tsp Dark soy sauce
  • 1 tbsp Cooking wine
  • 1 tsp Sugar
  • 1/4 tsp Salt
  • 3 tbsp Vegetable oil
  • for garnish Cilantro
  • 2 tbsp Roasted peanuts (optional)

Instructions

  1. Break cauliflower into small florets. Wash and drain thoroughly.
  2. Heat oil in wok over high heat until smoking. Add dried chilies and Sichuan peppercorns, stir-fry 15 seconds.
  3. Add cauliflower florets, stir-fry vigorously for 3-4 minutes until edges are charred.
  4. Add garlic, ginger, and scallions. Stir-fry 30 seconds. Add soy sauces, cooking wine, sugar, and salt. Toss well and serve.

Common Questions

How can I make this spicier?

Add chili oil or chili crisp to taste, or include dried red chilies during cooking. A dash of Sichuan peppercorn adds a different kind of heat.
