Spicy Dry Pot Cauliflower
Ingredients
- 500g Cauliflower (broken into small florets)
- 6-8 Dried red chilies
- 1 tsp Sichuan peppercorns
- 2 tbsp Minced garlic
- 1 tbsp Minced ginger
- 3 Scallions (white parts, cut into sections)
- 100g Ground pork (optional)
- 2 tbsp Light soy sauce
- 1 tsp Dark soy sauce
- 1 tbsp Cooking wine
- 1 tsp Sugar
- 1/4 tsp Salt
- 3 tbsp Vegetable oil
- for garnish Cilantro
- 2 tbsp Roasted peanuts (optional)
Instructions
- Break cauliflower into small florets. Wash and drain thoroughly.
- Heat oil in wok over high heat until smoking. Add dried chilies and Sichuan peppercorns, stir-fry 15 seconds.
- Add cauliflower florets, stir-fry vigorously for 3-4 minutes until edges are charred.
- Add garlic, ginger, and scallions. Stir-fry 30 seconds. Add soy sauces, cooking wine, sugar, and salt. Toss well and serve.
