A delicious Iron Basin Beef recipe.
Slice the beef thinly against the grain. Marinate with cooking wine, soy sauce, and a pinch of salt for 15 minutes.
Prepare aromatics: mince garlic and ginger, cut scallions into sections, and break dried chilies into pieces.
Heat oil in an iron basin or wok over high heat. Sear the marinated beef until just browned, then remove and set aside.
In the same basin, add more oil and stir-fry the dried chilies, Sichuan peppercorns, garlic, and ginger until fragrant.
Return the beef to the basin. Toss everything together over high heat. Garnish with scallions and serve sizzling.
