A delicious Tomato Beef and Tofu Skin Pot recipe.
Slice the beef tenderloin thinly. Add light soy sauce, cooking wine, sugar, cornstarch, black pepper, and salt. Mix well, then drizzle in cooking oil and mix again to coat.
Sauté garlic until fragrant, add tomatoes and cook until they break down into a saucy consistency, then add water and bring to a boil.
Add the tofu skin and enoki mushrooms, bring back to a boil, and season the broth to taste.
Arrange the marinated beef slices evenly on top, cover with a lid, and cook until the beef just changes color. Garnish with chopped scallions before serving.
