Minced Pork with Potatoes
Ingredients
- 4 potatoes
- 1 carrot
- 1 onion
- 250g minced pork
- 50g garlic
- 1 dark soy sauce
- 2 light soy sauce
- a pinch salt
- 1 oyster sauce
- 1 cornstarch
- as needed scallion
Instructions
- Dice the potatoes and carrot, stir-fry in oil. Add diced onion and cook until done. Remove and set aside.
- In the remaining oil, stir-fry the minced pork until broken up. Add minced garlic and diced onion, cook until the pork releases its fat and becomes fragrant.
- Add the potato and carrot mixture back and stir-fry evenly.
- Season with 2 tbsp light soy sauce, 1 tbsp oyster sauce, 1 tbsp dark soy sauce, a pinch of salt, and 1 bowl of cornstarch water.
- Simmer and bubble for a few minutes. Sprinkle with scallions and serve!
- Great for kids to take to school as lunch!
