    Step 1

    Wash the mulberry shoot tips and blanch for 1–2 minutes, then transfer directly into cold water to rinse away residual oxalic acid. After the cold water bath, drain well and finely chop. Heat oil in a wok, sauté scallions and ginger until fragrant, then add light soy sauce and salt (just enough salt for the mulberry shoots). Let the oil cool, then mix in the chopped shoots. Finally, add the pre-seasoned pork filling and combine. Knead the dough and you’re ready to wrap dumplings.

    Bring a pot of water to a boil and cook the dumplings. Following the traditional rule — three boils for meat dumplings, two for vegetable — bring to a boil three times.
