A delicious Pan-Fried Noodlefish Fritters recipe.

Briefly rinse the small noodlefish in water — you can skip this step if you prefer a saltier taste. Wash a few stalks of chrysanthemum greens and dice them.

Don’t drain the fish too dry. Add the diced chrysanthemum greens and a small amount of flour, then mix everything together evenly.

Heat the pan and add a small amount of peanut oil. After a few seconds, spoon in a small portion of the noodlefish batter and spread it into a pancake. Cook until the fish on top changes color, then flip and cook until the surface of the fritter is crispy. Serve immediately.
