A delicious Passion Fruit and Mint Cold Beef Salad recipe.

Prepare ingredients: 150-200g beef, a handful of fresh mint leaves, 1/2 red onion, 1/2 cucumber, minced garlic, diced Thai chili, white sesame seeds, and hot oil. For the marinade: a pinch of salt, a pinch of black pepper, a tiny splash of dark soy sauce, light soy sauce to taste, oyster sauce to taste, and 1 tbsp sweet potato starch or cornstarch. For the passion fruit dressing: 80g purple passion fruit pulp, 5 calamansi limes, 15g honey, 0.5g fine salt, 10ml apple cider vinegar, and sugar to taste.


Make the passion fruit dressing — aim for a sweet-and-sour balance. Yellow passion fruit may lack tartness, so adjust with calamansi juice and vinegar accordingly.

Julienne the onion, slice the cucumber, wash and set aside the mint. Mince the garlic, dice the Thai chili, and pour hot oil over them to release the aroma. Let cool, then mix with the passion fruit dressing.

Heat a wok until it just starts to smoke, add oil, then stir-fry the beef over high heat quickly — cook just until it loses its pink color and remove immediately. (Tip: blanching the beef in boiling water instead is also an option, similar to a cilantro beef salad method — uses less oil and tastes great too.)

Combine all the prepared ingredients in a large bowl, pour in the dressing, and toss everything together until well mixed.
