A delicious Plain Yeasted Flatbread recipe.

Add 2.5 g yeast and 5 g sugar to 250 g flour. Pour in 200 g warm water and stir until evenly combined.

The dough will be quite soft and sticky — don’t use your hands. Stir with chopsticks in one direction until no dry flour remains. Cover with plastic wrap and let it rise. In summer, about 2 hours; in winter with heating, 2 hours should also work. Alternatively, refrigerate overnight and make the bread the next day.

Shape it into a round, flip it over, cover with a lid, and let it rest for another 10 minutes.

After 10 minutes, dust your hands with a little flour to prevent sticking, then gently press the dough into an even round.

Set the electric griddle to the “yeasted flatbread” mode (14 minutes). After 5–6 minutes, the lid will already be lifted by the rising bread.

The bread is fairly thick, so you may flip it once halfway through (adjust based on your griddle’s heat). I didn’t flip mine — the yeasted flatbread mode cooked it through in one go.

Slice it open to check — press it and it should spring back; if it’s not sticky to the teeth, it’s done.

If it’s gone cold, just reheat it briefly on the electric griddle and it’ll taste freshly made.
