Garlic Scapes Stir-Fry with Egg and Wood Ear Mushrooms
Ingredients
- 250 Garlic scapes (蒜薹)
- 4 Eggs
- 1 Dried wood ear mushrooms
- 2 Garlic cloves
- 2 Fresh chili peppers (小米辣)
- 1.5 Light soy sauce
- 1 Oyster sauce
- 1 Dark soy sauce
- 1 Sugar
- 1 Cornstarch
- 1/4 Water
Instructions
- Prepare the ingredients: Soak the dried wood ear mushrooms until soft, then rinse and tear into small pieces. Beat the 4 eggs in a bowl. Cut the garlic scapes into sections. Mince the garlic and fresh chili peppers. Set aside.
- Mix all the sauce ingredients together in a bowl. The secret to this delicious dish is this savory umami-packed sauce!
- Heat oil in a wok or pan. When hot, pour in the beaten eggs and scramble until set. Remove and set aside.
- Add a little more oil to the pan. Add the minced garlic and chili peppers, stir-fry until fragrant.
- Add the wood ear mushrooms and garlic scapes to the pan. Stir-fry briefly, then pour a little water along the side of the pan. Cook for 2-3 minutes.
- Return the scrambled eggs to the pan.
- Pour the prepared sauce into the pan and quickly toss everything together until evenly coated. (The sauce already contains salt from the soy sauce and oyster sauce, so no additional salt is needed. You can taste before serving and add a pinch of salt if desired.)
- Cook until the sauce thickens and coats the ingredients. Ready to serve!
