A delicious Quick Breakfast Potato and Egg Pancake recipe.

Peel a medium potato and grate or cut into thin julienne strips. Add a pinch of salt, white pepper, flour, egg, and chopped scallions.


Brush a flat grill pan or skillet with oil. Spoon a portion of the mixture into the pan and use chopsticks to make an egg-sized hole in the center.



Flip and cook the other side. If you’re worried the yolk isn’t fully cooked through, poke it a few times with a toothpick.
