A delicious Roasted Salmon Trimmings recipe.
Wash and pat dry the salmon trimmings. Marinate with cooking wine (or rice wine/beer), a pinch of salt, sugar, black pepper, Sichuan peppercorn powder, a splash of light soy sauce, a splash of oyster sauce, and a few lemon slices (or calamansi). You can add a drizzle of olive oil, though the salmon is already quite fatty. Let marinate for 20 minutes.
Place some scallion whites at the bottom of the air fryer basket. Air fry at 200°C (390°F) for 20 minutes; if using olive oil, reduce to 180°C (350°F). Flip halfway through. Optionally sprinkle with parsley flakes before roasting.
