Prep the ingredients: Dice the garlic scapes, pork, mushrooms, and ham sausage into small cubes.

Start by stir-frying the diced pork until cooked through. Add the garlic scapes and mushrooms, then the diced ham. Season with salt, light soy sauce, dark soy sauce, and oyster sauce. Add a splash of water and stir-fry for a few minutes until everything is cooked.
