A delicious Scallion Salt Pork Collar recipe.

Marinate the pork: Tenderize the pork collar slices by pounding with the back of a knife. Add sliced ginger, cornstarch, a splash of light soy sauce and oyster sauce, plus a pinch of salt and black pepper. Don’t overdo the seasonings. Marinate for at least 30 minutes.


Make the scallion salt sauce: Finely chop the scallion greens (white parts only for this sauce, no whites) into small pieces. Mix with a small amount of minced ginger and garlic, sesame seeds, plus 1 small spoon each of salt, sugar, black pepper, and sesame oil. Add a splash of lemon juice.

Once the pork is done, cut it into bite-sized pieces. Pour the scallion salt sauce over the pork, cover with a lid, and let it steam for 1 minute. Serve.
