A delicious Scallion-Seared Beef recipe.

Slice the beef and marinate: add cornstarch, 2-3g baking soda, one egg white, a pinch of black pepper, and a drizzle of oil to lock in moisture.

Chop the scallions (fresh is best — frozen works but the color fades). Mix chopped scallions with minced garlic from half a head, white sesame seeds, salt, a pinch of sugar, and a spoonful of oil to make the scallion-salt sauce.
