A delicious Soy-Marinated Beef (Jiang Niu Rou) recipe.
Soak the beef in water for 30 minutes. Blanch with scallions, ginger, Sichuan peppercorns, and cooking wine.
Remove the beef and rinse off any scum. Place it in a pressure cooker with a spice bag, ginger, garlic, light soy sauce, dark soy sauce, dried chilies, and enough water to just cover the beef. Pressure cook for 20 minutes.
Take the beef out and let it cool. Wrap tightly in plastic wrap and freeze for about 3-4 hours. Check periodically – it should not freeze solid. When it feels firm to the touch, it is ready to slice.
