Stir-fried Beef with Sichuan Peppercorn Shoots

Instructions

  1. Marinate the beef with salt, cornstarch, and Sichuan peppercorn oil. Mix well. To highlight the fresh aroma, omit soy sauce and cooking wine. Since these two seasonings are left out, use slightly more salt than usual.
  2. Pick the Sichuan peppercorn shoots, removing the woody stems. Spring vegetables can be tedious to prep but it's worth it.
  3. Add a little green pepper for extra flavor.
  4. Mince the garlic.
  5. Quick-fry the beef in hot oil, then fry the vegetables. Sauté the minced garlic until fragrant, return the beef and vegetables to the wok, and drizzle with Sichuan peppercorn oil just before serving.
