Cut the salmon into cubes. Marinate with a pinch of salt, coarsely ground black pepper, and 1 tsp cooking wine for 5 minutes to remove any fishiness and let the flavors penetrate. Peel the woody ends of the asparagus and cut into segments; wash and slice the mushrooms.

Bring a pot of water to a boil, add a pinch of salt and a few drops of oil. Blanch the asparagus for 30 seconds, then immediately transfer to cold water and drain (this keeps it vibrant green and crisp-tender).

Heat a little oil in a pan over medium-low heat. Add the mushroom slices and pan-fry without stirring too often until they release their moisture and develop golden edges. Sprinkle with a pinch of salt and set aside.

Tip: Don’t flip the mushrooms too often while pan-frying — letting them develop charred edges doubles the aroma.

In the same pan, add a touch more oil. Sear the salmon cubes over medium-low heat until golden on all sides with slightly crispy edges, about 2-3 minutes. Note: Don’t cook the salmon all the way through — leaving it slightly pink in the center keeps it tender and prevents it from drying out.
