A delicious Western-Style Beef and Potato Cakes recipe.
Wash the potatoes and steam until tender. Remove from heat, let cool, then peel. Wash and finely dice the onion. Crack the eggs into a bowl and beat well.
Melt the butter in a pan over medium heat. Add the ground beef and diced onion, stir-frying until fragrant. Season with salt and stir to combine. Transfer to a mixing bowl, add the mashed potatoes, and mix thoroughly.
Add a small amount of flour and mix until well combined. Shape the mixture into small patties. Dust each patty with flour, dip in beaten egg, then coat evenly with breadcrumbs. Press gently to firm up the shape.
Heat vegetable oil in a frying pan to around 50% hot (moderate heat). Pan-fry the patties over medium-low heat for about 5 minutes until cooked through and golden. Remove and drain on paper towels.
