  • 1 White sesame seeds
  • 2 Ginger
  • 2 Garlic
  • 2 Sugar
  • ½ Cooking wine
  • 1 Light soy sauce
  • 1 Five-spice powder
  • 1 Salt

Instructions

  1. Cut the chicken wings into small pieces, rinse clean, and pat dry.
  2. Mince the garlic and ginger; set aside. Measure 1 tablespoon Sichuan peppercorns and dried chili peppers into a bowl.
  3. Add minced ginger, ½ tbsp cooking wine, 1 tbsp light soy sauce, 1 tsp salt, and 1 tsp five-spice powder to the chicken. Mix well and refrigerate to marinate for at least 30 minutes.
  4. Heat oil to about 160°C (320°F). Add the chicken pieces and deep-fry over medium heat until golden. Remove and drain. (Optional: fry the peanuts in the same oil if desired.)
  5. Leave a thin layer of oil in the wok. Add minced garlic, Sichuan peppercorns, and dried chili peppers. Stir-fry gently over low heat until fragrant.
  6. Add the fried chicken, peanuts, 1 tsp salt, 2 tsp sugar, and white sesame seeds. Toss everything together until well combined.
