Stir-fried Bean Sprouts with Ham (Rice-Stealing Side Dish)
Ingredients
- 500g mung bean sprouts
- 2 ham sausage
- 1 small piece carrot
- 3 garlic cloves
- 2 dried red chilies
- 2 ginger
- 2 scallions
- a pinch salt
- a splash light soy sauce
- a pinch sugar
- a pinch chili powder
Instructions
- Prep the ingredients: 1) Slice the ham sausage into rounds; 2) Cut the carrot into thin strips (for color — you can substitute green pepper strips); 3) Wash the bean sprouts, trimming roots if you like (or just wash them as-is); 4) Mince the ginger, garlic, and dried red chilies; 5) Cut the scallions into long sections.
- Heat the wok with oil — use slightly more oil than usual. Add the ham slices and pan-fry briefly.
- Remove the ham and set aside, leaving the oil in the wok.
- Add the ginger, garlic, and dried chilies and stir until fragrant.
- Add the mung bean sprouts and carrot strips. Toss and stir-fry.
- Stir-fry until the sprouts are just wilted and tender.
- Return the ham slices to the wok. Season with light soy sauce, salt, and sugar to taste. Add chili powder if you like it spicy.
- Continue stir-frying until everything is well coated and flavorful. Toss in the scallion sections just before taking it off the heat.
- Simple, fragrant, and absolutely irresistible with a bowl of rice!
