A delicious Braised Beef recipe.

Cut the beef shank into large chunks. Place in cold water, bring to a boil, and blanch for 5 minutes to remove impurities. Remove and rinse clean.
Heat a small amount of oil in a pot over medium heat. Add rock sugar and stir until it caramelizes into a deep amber color.
Add ginger slices, scallion stalks, star anise, cinnamon stick, bay leaves, Sichuan peppercorns, and dried chili peppers. Stir-fry until fragrant.
Add enough hot water to fully submerge the beef. Bring to a boil, then reduce heat to low and simmer for 2–2.5 hours until the beef is tender.
Season with salt to taste. Turn off the heat and let the beef soak in the braising liquid for at least 2 hours (or overnight in the refrigerator) for best flavor.
Remove the beef, slice against the grain, and serve. The braising liquid can be reserved as a master stock for future use.
