A delicious Lazy Braised Sole Fish in Rich Sauce recipe.
Cut into pieces: Let the frozen sole fillet sit at room temperature until it’s just soft enough to cut, then cut into bite-sized pieces.
Marinate: Prepare the marinade — cooking wine, light soy sauce, salt, white pepper, and 1 tbsp sweet potato starch. Mix well. Add the fish pieces while still slightly icy, along with a few ginger slices. As the fish thaws and releases water, it will naturally thin into a light sauce. Toss several times and marinate for 20 minutes.
Stir-fry: Heat a wok with oil (be generous). Add the fish pieces. If you can’t get a nice golden sear, simply break them up gently with a spatula. When the fish changes color and is nearly cooked through, add a splash of water to the leftover marinade in the bowl and pour it back into the wok. Stir-fry briefly.
Serve: The fish is done when it can be easily flaked apart with chopsticks and the sauce has naturally thickened. Serve immediately.
