| baking powder | 2 as needed |
| warm water | 200 as needed |
| oil | as needed |
| scallions (chopped) | 1 as needed |
| white sesame seeds | as needed |
| eggs | 4 as needed |

Combine flour, yeast, baking powder, and warm water in a bowl. Mix well with chopsticks until smooth, then let it ferment.

After 2 hours of fermentation, the batter will appear looser with air bubbles throughout.

Oil your work surface and hands, then transfer the dough onto the surface.

Divide the dough evenly into 4 portions.

Gently flatten each portion into a disc.

Heat oil in a pan over medium-low heat, then place the dough discs in to pan-fry.

Crack an egg onto the surface of each pancake, then sprinkle with chopped scallions and white sesame seeds.

Flip once the bottom is set and golden.

Pan-fry until both sides are golden brown, then remove from the pan.
