A delicious Quick Home-Style Bitter Melon with Beef recipe.
Prep: 1. Slice the beef, mix with cornstarch, a little oyster sauce, and peanut oil to marinate. 2. Cut the bitter melon on a diagonal into slices. 3. Cut the ginger into julienne strips. 4. Mince the garlic.
Heat the wok, then add cold oil. Toss in the ginger and garlic and sauté until fragrant. Add a splash more oil to bring the temperature down, then add the beef and stir-fry until about 60–70% done. Remove and set aside.
In the same wok with the residual beef oil, add a little more oil. Sauté the ginger and garlic until fragrant, then add the bitter melon and stir-fry. Season with a pinch of salt and cook until about 60% done.
Return the beef to the wok. Add oyster sauce, drizzle soy sauce around the edge of the wok, and season with MSG and salt. Stir-fry everything together until the beef is no longer pink — be careful not to overcook it. Serve immediately.
