A delicious Charred Pepper Tofu Beef recipe.
Slice the beef and marinate with oyster sauce, soy sauce, sugar, cornstarch, and a drizzle of oil.
Wash the green peppers and place them in a dry pan (no oil). Char them until the skins blister and turn black. Transfer to a blender and pulse into a coarse paste.
Heat oil in the pan, add plenty of minced garlic, then stir in the charred pepper paste and cook until fragrant. Add boiling water and season with salt, soy sauce, and sugar. Bring to a boil then reduce to low heat.
Add the marinated beef slices one by one into the simmering broth. Bring back to a boil over high heat. Once the beef changes color, thicken the sauce with a little cornstarch slurry.
Place tofu blocks in a clay pot, then pour the charred pepper beef mixture over the top. Serve hot.
