A delicious Stir-fried Chicken with Chili and Broad Bean Paste recipe.
Cut the chicken into small pieces. Slice ginger and garlic thinly. Cut scallions into sections. Slice bird’s eye chilies and dried chilies into segments.
Heat a mix of vegetable oil, rapeseed oil, and lard in a wok. Add chicken pieces with a few slices of ginger, bay leaves, star anise, and Sichuan peppercorns. Stir-fry until the chicken is dry and slightly charred. Splash in baijiu and stir-fry to remove any gamey smell. Add dried chilies and broad bean paste, stir-frying everything together. Season with light soy sauce and dark soy sauce.
