A delicious Crispy Small Crucian Carp recipe.

Clean the small crucian carp: remove scales, heads, and innards. Rinse thoroughly and pat dry with paper towels (this prevents oil splatter during frying).




Line the bottom of a pressure cooker with one scallion stalk, 5 slices of ginger, and the whole head of garlic. Arrange the fried fish on top.

In the hot oil used for frying, quickly fry the remaining scallions, ginger, star anise, cinnamon stick, and bay leaves until fragrant. Pour everything (oil and aromatics) into the pressure cooker.



Pressure cook for 40 minutes. If the fish bones are not tender enough, extend the cooking time as needed.
