  • 200g fresh shrimp
  • 3 eggs
  • 150g soft tofu
  • 150g seafood mushrooms
  • 4 shiitake mushrooms
  • 1 tsp chopped scallions
  • 5g salt
  • 2g pepper
  • 2 tbsp vegetable oil

Instructions

  1. Prepare all ingredients: fresh shrimp, seafood mushrooms, shiitake mushrooms, eggs, and silken tofu.
  2. Heat olive oil in a wok and add shrimp heads. Stir-fry until red oil is released.
  3. Pour in 1200ml hot water and boil for about 5 minutes. Remove the shrimp heads and set aside.
  4. Beat 2 eggs in a bowl. Heat a little olive oil in a pan and pour in the eggs. Fry until both sides are golden and set.
  5. Push the fried egg to the side of the pan. Add peeled shrimp and cook in the remaining oil until they change color.
  6. Add the fried egg, shrimp, and mushrooms to the shrimp broth.
  7. Cover and boil over high heat for about 5 minutes.
  8. Add tofu, bring back to a boil, and cook for another 2 minutes.
