Scallion Oil Abalone Slices
Ingredients
- 12 abalone
- 2 tbsp steamed fish soy sauce
- 6 stalks scallion
- a little peanut oil
- appropriate ice cubes
Instructions
- Clean the abalones and remove the innards.
- Slice and set aside.
- Bring water to a boil, add ginger slices, and cook the abalone for about 20-25 seconds, then remove.
- Plunge the cooked abalone into cold water, then transfer to ice water. This makes the abalone more crisp and firm!
- Heat oil in a wok, add scallion segments, and fry until the scallions turn black, then remove them.
- Drain the abalone slices, add julienned scallions, and pour on some steamed fish soy sauce.
- Finally, drizzle the hot scallion oil over the abalone slices and it's ready to serve.
