Pan-Fried Tofu (Home Style)

Ingredients

  • 1 block firm tofu
  • 3 garlic cloves
  • 3-4 bird's eye chili
  • 1 garlic scapes

Instructions

  1. Pan-fry tofu until golden brown on both sides. Remove and set aside.
  2. Heat oil in the wok, add minced garlic and bird's eye chili. Stir-fry until fragrant. Add 1 tbsp light soy sauce and half tbsp dark soy sauce.
  3. Add 1 tbsp oyster sauce.
  4. Season with a pinch of salt and pepper.
  5. Add half bowl of water, then add the fried tofu.
  6. Simmer for about 2 minutes, then drizzle in a little starch water to thicken the sauce.
  7. Cook for 30 seconds to reduce the sauce. Add garlic scapes before serving (optional — I had some leftover, adds nice color. Scallions work great too!).
  8. This really goes through a lot of rice!
