Steamed Beef Slices
Ingredients
- 500 beef
- 3 cloves garlic
- 2 cornstarch
- 2 slices ginger
- to taste white pepper
- 1 oyster sauce
- 1 soy sauce
- 1 cooking oil
- 2 scallions
Instructions
- Wash the beef and slice it thinly.
- Add minced garlic, minced ginger, and white pepper. (A tiny splash of baijiu is optional but not listed in ingredients.)
- Add cornstarch, oyster sauce, soy sauce, and cooking oil (you can substitute sesame oil, and a little Sichuan pepper oil is nice too). Mix well by hand. Let it sit for 5-15 minutes. If you have time, you can even refrigerate it for up to 2 hours ahead.
- Add a bowl of cold water to a pot, place the steaming rack and a plate inside, cover, and heat until steam rises.
- Spread the beef flat on the plate — make sure it's in an even layer! Steam for 5-6 minutes if you prefer it tender, or 7-8 minutes if you like it more chewy.
- When done, sprinkle with chopped scallions and julienned ginger. Serve and enjoy!
