Prepare all ingredients: slice the beef thinly, peel and devein the shrimp, slice the onion and green bell pepper.

Cook the udon noodles according to package instructions, then drain and set aside.

Heat oil in a wok over high heat. Stir-fry the beef until just browned, then remove and set aside.

In the same wok, stir-fry the shrimp until pink and curled. Add the sliced onion and green bell pepper, and toss until slightly softened. Adding some green onion leaves adds great aroma.

Add the cooked udon noodles to the wok along with the light soy sauce, dark soy sauce, soy sauce, oyster sauce, and a pinch of salt. Toss everything together thoroughly.

Return the beef to the wok and stir-fry everything together for another 1-2 minutes until well combined and heated through.

Taste and adjust seasoning if needed. Transfer to a plate and serve hot.
