Steamed Spare Ribs with Black Bean Sauce
Ingredients
- 500g pork spare ribs
- 0.5 tbsp fermented black beans (douchi)
- 1 potato
- 1 garlic cloves
Instructions
- Prepare 500g pork spare ribs. Add 1 tbsp flour and water to the chopped ribs, then repeatedly scrub and rinse for 2 minutes to draw out blood and impurities. Rinse several more times with clean water — this ensures the steamed ribs won't have any gamy smell.
- In a bowl, combine 2 tbsp minced garlic and a small half-spoonful of fermented black beans. Pour hot oil over them to release their aroma. Season with 2 tbsp light soy sauce, 1 tbsp oyster sauce, a pinch of salt, and a little sugar.
- Mix well, then pour the sauce over the ribs. Add 1 tbsp cornstarch and toss everything together evenly. Marinate for about 30 minutes.
- Line the bottom of a steaming plate with sliced potato.
- Once the water is boiling, place the plate in the steamer and steam for 25 minutes.
- So fragrant! The ribs come out tender and silky smooth.
