Tender Stir-fried Beef Slices — Quick & Easy

Ingredients

  • 500g beef
  • carrot
  • snow peas
  • salt
  • 2 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 4 cloves garlic
  • sweet potato starch
  • 2 tbsp cooking oil

Instructions

  1. For the best texture, choose yellow beef (avoid water-injected beef). Slice the beef as thinly as possible — cut across the grain. If you're unsure about the grain, ask the butcher to slice it for you.
  2. For 500g of beef, season with: a pinch of salt (use a small spoon), 2 tablespoons light soy sauce, 1 tablespoon oyster sauce, and 4 cloves of sliced garlic. Mix everything together evenly. Note: these seasonings are for 500g of beef.
  3. After mixing in the seasonings, add a small amount of sweet potato starch and toss to coat the beef evenly with a thin layer.
  4. The beef should look evenly coated with a nice color after tossing.
  5. Drizzle in 2 tablespoons of cooking oil and mix well — this seals in the flavor and moisture of the beef.
  6. Cover with plastic wrap and refrigerate for a few hours before cooking. Refrigerating also helps with acid drainage, which improves the beef's flavor. Note: 500g of marinated beef can be stored in the fridge for 2–3 days. For a family of 2–3, cook half at a time.
  7. Prepare the side vegetables: snow peas, chili peppers, and sliced carrots.
  8. Since the batch is large, take out only the portion you want to cook. Mix the beef with chili peppers before stir-frying.
  9. Heat the wok over high heat with oil. Add the beef and stir-fry for 10–15 seconds. As soon as the beef changes color, remove it from the wok. Overcooking will make it tough.
  10. Transfer the stir-fried beef to a plate and set aside. If you're not adding vegetables, it's delicious served right here!
  11. After removing the beef, leave the oil in the wok. Add the snow peas and carrot slices.
  12. Add a pinch of salt and stir-fry until just tender-crisp. Then return the beef to the wok, drizzle 1 tablespoon of light soy sauce for color, and toss quickly for 3–5 seconds before turning off the heat.
  13. The finished dish — beautifully plated.
  14. Ready to serve!
