Blanch the amaranth for 2 minutes. Add a pinch of salt and two drops of oil to the water to keep the color vibrant. The water will turn red — this is normal. Drain and arrange the amaranth in the bottom of a bowl.

Heat oil in a wok over high heat. Add minced garlic and ginger slices, stir-fry until fragrant, then add the egg chunks and stir-fry briefly.

Pour in a small bowl of hot water. Once boiling, season with salt and white pepper powder.
