Heat a little oil in a pan and stir-fry the ground beef until cooked through. Add diced bell peppers (red, yellow, green — I ran out of green 😏). Season with pepper, salt, oyster sauce, and ketchup. Stir-fry until the sauce thickens, then remove from heat.

Preheat the oven to 200°C (400°F). Steam the potatoes until tender, then mash into a smooth purée. Wearing disposable gloves, shape the mashed potato into balls, then form each into a bowl shape. Arrange on a baking sheet and lightly spray with oil.

Bake in the preheated oven at 200°C (400°F) for 15–20 minutes.

Layer shredded cheese on the bottom of each potato cup, then fill with the cooked beef mixture.

Top with another layer of shredded cheese.

Return to the oven and bake at 200°C (400°F) for 5 minutes until the cheese is melted and bubbly. Serve immediately.
