A delicious Braised Green Beans with Eggplant recipe.

Make the sauce: Mix 1 tbsp light soy sauce + 1 tbsp oyster sauce + ½ tbsp dark soy sauce + a pinch of sugar + 1 tbsp cornstarch. Stir until smooth.

Cut the eggplant into strips, sprinkle with a little salt, and let sit for 10 minutes to draw out moisture. Squeeze out the excess water. Heat oil in a wok and stir-fry the green beans until just cooked through. Remove and set aside.
In the same wok with residual oil, add the eggplant strips and stir-fry until the skin is golden brown. Remove and set aside. Add a little oil, sauté minced garlic and dried chilies until fragrant, then return the green beans and eggplant to the wok. Pour in the sauce and toss everything over high heat until the sauce thickens and coats the vegetables evenly. Serve immediately!
