A delicious Crispy Deep-Fried Baby Fish recipe.
Clean the baby fish, removing the innards. Rinse well and marinate with cooking wine, julienned ginger, and salt.
Prepare the batter: combine flour, a small amount of cornstarch, egg, a splash of water, salt, and sugar. Mix until the batter is thick enough to coat the fish evenly.
Heat cooking oil in a wok until it begins to smoke. Coat the baby fish in the batter and carefully lower into the hot oil. Deep-fry until about 70–80% done, then remove and drain.
Re-fry the fish a second time until both sides are golden brown and crispy. Serve immediately — crunchy and delicious, perfect as a beer snack!
