Healthy Steamed Chicken Buns with Mushroom and Carrot
Ingredients
- 140 All-purpose flour
- 30 Buckwheat flour
- 30 Whole wheat flour
- 2 Yeast
- 110 Water
- 200 Chicken breast
- 80 Carrot or onion
- 80 Fresh mushrooms or shiitake
- 1 Egg
- 2 Cooking wine
- 6 Soybean paste
- 2 Sugar or sweet bean paste
- 10 Dark soy sauce
- 15 Light soy sauce
- 1 Ground white pepper
- 1 Chicken bouillon powder
- 2 Starch
Instructions
- Boil water. Mix 30g buckwheat flour, 30g whole wheat flour with 116g boiling water. Let cool.
- Once cooled, add all-purpose flour and yeast. Knead until smooth. Place in a container, cover with plastic wrap, and ferment at around 30°C for about 1 hour.
- Dice chicken, mushrooms, and carrots in a food processor. Mix chicken with 1 egg and all seasonings. Marinate for 15 minutes.
- Heat a little oil in a pan. Stir-fry marinated chicken until it changes color. Add mushroom and carrot dice, cook until done. Remove and let cool. Check seasoning at this point.
- Divide dough into 7 portions and wrap with filling. Second proof until 1.5-2 times larger.
- Bring water to a boil, steam for 10 minutes. Delicious buns are ready! Pair with a glass of milk for a healthy, perfect weight-loss breakfast.
