  • 2 duck gizzards
  • cooking wine
  • garlic
  • bird's eye chili
  • ginger
  • a little hotpot base
  • salt
  • light soy sauce
  • dark soy sauce
  • chicken bouillon

Instructions

  1. Prepare a bunch of garlic scapes and 2 duck gizzards (blanch the gizzards with some cooking wine before stir-frying). Also prepare garlic, bird's eye chili, ginger, and a small amount of hotpot base.
  2. Heat oil in a wok and add the aromatics (garlic, ginger, chili, hotpot base). Stir until fragrant.
  3. Add the blanched duck gizzards. Season with a pinch of salt and light soy sauce, then stir-fry. If the wok gets too dry, add a splash of water and continue stir-frying.
  4. Add the garlic scapes and continue stir-frying. If you prefer softer garlic scapes, cook them a bit longer.
  5. Done! Serve and enjoy.
