Minced Pork with Silky Tofu
Ingredients
- 1 soft tofu
- 80 minced pork
- 1 dried shiitake mushroom (soaked)
- 1 bird's eye chili
- 1 handful chopped scallions
- a little cornstarch slurry
- 1.5 soy sauce
- a pinch salt
- as needed cooking oil
Instructions
- Soak the dried shiitake mushroom until soft (save the soaking water). Dice and set aside.
- Add the diced mushroom, minced garlic, a pinch of salt, soy sauce, and half a spoon of cooking oil to the minced pork. Mix well.
- Add a little oil to a wok (olive oil for a lighter version). When about 70% hot, add the minced pork and cook through. Add minced garlic and chili, stir-fry briefly, then pour in half a bowl of mushroom soaking water and bring to a boil.
- Cut the soft tofu into cubes (about 2x2cm) and gently slide them into the wok.
- Add 2 spoons soy sauce and a pinch of white pepper. Pour in the cornstarch slurry (2 spoons cornstarch + 1/3 bowl water). Switch to medium heat and leave the lid off.
- When the sauce comes to a boil, don't let it reduce too much — leave some sauce to mix with rice! Serve and sprinkle with chopped scallions.
