A delicious Original Broth Beef Soba Noodles recipe.

Preparation: 1. Soak the beef short ribs in water for at least 1 hour, then cut into large chunks. 2. Prepare leek segments, ginger slices, garlic, bay leaf, star anise, cumin seeds, and Sichuan peppercorns. 3. Wash the spinach and set aside (other vegetables work too). 4. Have the low-fat soba noodles ready.


Place the blanched beef short ribs into a pressure cooker along with the leek, ginger, garlic, all spices, and a splash of light soy sauce. Cook in a pressure cooker for 1 hour, or in a regular pot for at least 1.5 hours. After cooking, season with salt and MSG to taste — add gradually in small amounts. After seasoning, simmer for a few more minutes to let the flavors penetrate the meat.

Cook the noodles in boiling water for about 7–8 minutes. Drain and rinse with cold water twice. Toss with a little oyster sauce to season. Blanch the spinach separately and set aside.

Assemble the bowl: cooked noodles + blanched spinach + braised beef short ribs. Ladle several spoonfuls of the original beef broth over the top, and garnish with chopped scallions. Pure satisfaction!
