  1. Slice the beef against the grain into thin pieces (about 2-3mm thick — thinner means more tender. I froze it slightly for easier slicing, though maybe a bit too long!). You can also cut into thin strips depending on how you plan to cook it.
  2. Add to the beef: light soy sauce, oyster sauce, cornstarch, egg white, and cracked black pepper. Mix by hand for 1-2 minutes, making sure every slice is evenly coated. Keep mixing until the beef becomes sticky and has absorbed all the marinade.
  3. Seal with oil (the soul of tenderizing!): After mixing, drizzle half a spoon of cooking oil and mix again until absorbed.
  4. Once the first round of oil is absorbed, drizzle another half spoon of oil on top to seal. Done!
