Salt-Scallion Pork Chops

Ingredients

  • 500g pork collar (plum meat)
  • 150g scallions
  • 1 whole head garlic
  • 1 egg
  • white sesame seeds
  • a few slices ginger
  • cornstarch
  • black pepper
  • olive oil
  • salt
  • sugar
  • light soy sauce
  • oyster sauce

Instructions

  1. Cut the pork collar into 1cm-thick chops. Marinate with one egg, light soy sauce, black pepper, two slices of ginger, oyster sauce, and cornstarch for 20 minutes.
  2. Prepare the salt-scallion topping: mix chopped scallions + white sesame seeds + minced garlic + black pepper + salt + sugar + 2 tablespoons of olive oil.
  3. Heat a flat-bottomed pan with oil over medium heat. Place the pork chops in the pan.
  4. Pan-fry until both sides are golden brown and crispy — the cornstarch coating helps achieve a nice crust.
  5. Cut the pork chops into strips (you can cut them directly in the pan with kitchen shears).
  6. Return the strips to the pan and sear any undercooked edges.
  7. Once the pork strips are fully cooked on all sides, spread the salt-scallion topping evenly over them.
  8. Cover the pan with a lid and cook on the lowest heat for 3–5 minutes.
  9. Remove the lid and plate up — done!
