  1. Clean the abalones and remove the innards.
  2. Slice and set aside.
  3. Bring water to a boil, add ginger slices, and cook the abalone for about 20-25 seconds, then remove.
  4. Plunge the cooked abalone into cold water, then transfer to ice water. This makes the abalone more crisp and firm!
  5. Heat oil in a wok, add scallion segments, and fry until the scallions turn black, then remove them.
  6. Drain the abalone slices, add julienned scallions, and pour on some steamed fish soy sauce.
  7. Finally, drizzle the hot scallion oil over the abalone slices and it's ready to serve.
